Steak and Mushroom Kabobs

Hey guys!
      So, with the holiday weekend fast approaching, I thought this would be the perfect time to share a recipe you can make on the grill! I recently found this recipe on Pinterest, and it sounded so good I just had to try it. It ended up being very flavorful, tender, and of course boyfriend approved. I was actually so excited to make it I forgot to get a side dish for it, but made due with what I had, haha.

Here's what you'll need:
16-20 oz. steak of choice
8 oz white mushrooms

1/4 C olive oil
1/4 C white wine vinegar
1 T worcestershire sauce
1 to garlic powder
1/2 tsp salt
Pepper to taste

Prep time will be around 2 hours, cook time is only 6-10 minutes, depending on how well done you like your steak cooked.

      First, trim any excess fat off of the steaks and cut into 1-1 1/2 inch cubes. Place steak cubes in a ziplock baggie. Next combine olive oil, white wine vinegar, garlic powder, salt, and pepper in a bowl and whisk together. Pour marinade over steak in the ziplock, seal, and place in the refrigerator for an hour.

      When the hour is about up, wash and dry the white mushrooms and cut any large ones in half so they are all roughly the same size. This will make sure they cook evenly. Now you can put the mushrooms in the bag with the steak and refrigerate for another hour.

Side note:
I didn't have any large baggies, so instead I put the mushrooms in their own bag with some of the marinade from earlier.

      After the second hour is up, you can spray your grill with some non-stick cooking spray and set the flame to high. While it is heating up, go ahead and skewer your meat and mushrooms. I did mine on separate skewers since my boyfriend doesn't like mushrooms, and was happy to have all meat kabobs! You can cook the kabobs 3 minutes per side for medium rare, 4 minutes per side for medium, or 5 minutes per side for medium well.

      This is another point where I changed it up a bit from the original directions. As I live in an apartment with no deck/porch, I can't have a grill. However, I do have a Nuwave oven which I love! I used the same cook time for medium well, but did the mushrooms in a separate batch for only 4 minutes each side.

      When the kabobs are done, let them rest a couple minutes before taking them off of the skewers, then serve and enjoy!
As I said, I forgot to get something as a side dish, so I just cooked up some white rice from the cupboard and served the kabobs over it.  It turned out great, but next time I might try some potato wedges on the grill as well.
